moroccan chickpea stew.

well it’s late october, friends, and when the cooler months roll around (it is going to get cooler, right??) i am always looking for new soups to try out. i tend towards heartier ones because i love a one pot meal, and as much as i find myself preparing more than one meal (toddler in da house) i want simple, one stop meals as much as possible. i cook with chickpeas a lot, because they’re probably my favorite bean and i also love turmeric, so i thought i try my hand at a moroccan themed dish. this one came pretty much on the fly, and i’m really happy with how it turned out. it’s just a lil’ bit spicy, which makes it perfect when topped with plain yogurt or sour cream (if you’re down with dairy). i also came up with a light not-quite-cornbread to go with it and it was delicious all crumbled into the soup. hope you like it!

ingredients:

  1. 1 tablespoon olive oil
  2. 1/2 cup chopped sweet onion
  3. 1 clove garlic, chopped
  4. 2 teaspoons of grated fresh ginger
  5. 1 teaspoon coriander
  6. 1 teaspoon cumin
  7. 1/2 teaspoon cinnamon
  8. 1/2 teaspoon allspice
  9. 2 teaspoons turmeric
  10. 1/2 teaspoon allspice
  11. 1/2 teaspoon chili powder
  12. 2 tablespoon tomato paste
  13. 1 (15 oz) can diced tomatoes (drained)
  14. 2 (15 oz) cans chickpeas, drained and rinsed
  15. 1 sweet potato, cut into cubes
  16. 1 carrot, chopped
  17. 1 qt veg broth

directions:

  1. in a stock pot or dutch oven heat 1 tablespoon olive oil, add in the onion, garlic & ginger. next add the coriander, cumin, cinnamon,  turmeric, allspice & chili powder & cook until fragrant, about 2 minutes.
  2. add in the tomato paste.
  3. next add in the tomatoes, potatoes, chickpeas & carrot and then the veg broth.
  4. bring to a boil, then reduce heat & simmer until potatoes are tender, about 20 minutes.
  5. top with plain yogurt or sour cream & garnish with parsley & serve.
