bbq lentils with polenta.

i have been really wanting to try out this incredible recipe from the first mess, but i found myself without the proper ingredients, so i came up with what i like the call the lazy man’s version. i love this bbq sauce because it is crazy delicious without being full of sugar and/or molasses like most sauces. i threw together the barbecue sauce without having any shallots or garlic and it was still incredibly delicious. it’s a new favorite over here.

lazy man’s quick and dirty bbq sauce:

  1. 1 teaspoon smoked paprika
  2. 1 teaspoon garlic powder
  3. 1/2 teaspoon ground mustard
  4. 2 teaspoons chili powder
  5. 1 1/2 cups tomato sauce (this is equal to 1 15 oz. can. i like muir glen because it has no sugar)
  6. 1/4 cup maple syrup
  7. 2 tablespoons apple cider vinegar
  8. 2 tablespoons coconut aminos or 1 tablespoon tamari

the rest:

  1. 2 cups cooked black or french lentils
  2. 1 tablespoon olive oil
  3. 1/2 sweet yellow onion, diced
  4. 4 cups vegetable stock
  5. 1 cup dry polenta
  6. salt to taste

  1. cook your lentils according to package directions
  2. make the bbq sauce: in a saucepan combine the tomato sauce with the paprika, garlic powder, mustard & chili, then add in the vinegar, maple syrup and coconut aminos or tamari
  3. bring sauce to a boil & then reduce heat & simmer about 10 minutes
  4. add in the cooked lentils and simmer on low
  5. make the polenta: in a pot heat 1 tablespoon olive oil and add in the onion, cook until translucent, about 5 mins
  6. add the veg stock to the onion & bring to a boil
  7. slowly pour in the polenta in a steady stream while whisking gently
  8. turn down the heat to low and continue whisking until it has thickened to consistency you like
  9. top the polenta with bbq lentils and serve

the end.
