turmeric lentil soup.


strangely enough, soup is my baby’s favorite food. he is going through a completely picky phase, but soup seems to do the trick when he refuses everything else. this one is one of his favorites. it’s easy to make and simple without being bland and uses the wonder spice of wonder spices: turmeric.


  1. 1/2 yellow onion, chopped
  2. 1 tablespoon olive oil
  3. 2 tablespoons turmeric
  4. 1 teaspoon coriander
  5. salt to taste
  6. 2 cups red lentils
  7. 2 quarts vegetable stock
  8. 1 sweet potato, diced
  9. 2 cups spinach, chopped


  1. in a stock pot or dutch oven heat 1 tablespoon olive oil & add in chopped onion. sautee until just golden, about 2 minutes
  2. add in turmeric & coriander and mix until fragrant
  3. add in veg stock, then add potato & lentils
  4. bring to a boil, and let boil for 2-3 minutes
  5. reduce heat to simmer and let simmer until lentils are cooked & potato is soft, about 45 minutes
  6. stir in the spinach & add salt to taste and serve
