toddler friendly vegan minestrone


as my baby gets older he gets less and less interested in eating baby food and wants to eat real food. there is always the trouble of his lack of teeth, so i look for creative ways to feed us all together. i made this soup up last night and my son loved it, and so did my husband. it’s simple, the veggies and beans are small & soft enough for his little mouth, and it’s still really flavorful and hearty. it’s also vegan & gluten free, but you can use wheat pasta and top with cheese if you prefer.


  1. 1/2 medium sized yellow onion, finely chopped
  2. 1 14 oz can cannellini beans, drained & rinsed
  3. 1 14 oz can of diced tomatoes, liquid included
  4. 1 tablespoon olive oil
  5. 1 stalk of celery, thinly chopped
  6. 1 small zucchini, chopped
  7. 1 cup small pasta of your choice (i used sam mills gluten free pasta for kids, shaped like ducks)
  8. 4 cups vegetable broth
  9. 1/2 teaspoon dry oregano
  10. salt and pepper to taste


  1. in a stock pot heat 1 tablespoon olive oil over medium heat and add in onion
  2. cook onion until slightly browned, about 4 minutes
  3. add in oregano & a pinch of salt
  4. add in zucchini, celery & canned tomatoes (with liquid) and stir together
  5. add the veg broth & cover, bring to a boil
  6. once boiling reduce heat to a rolling simmer & cook there about 8 minutes
  7. add in the pasta & cook until pasta is tender & celery & zucchini are soft but not mushy, about 8 more minutes
