crunchy vegan gluten free waffles

we’re big waffle fans over here, it’s a bit of a family tradition. i made these this morning and they were so honestly perfect that i had to share (brag a little). the recipe is very similar to the pumpkin waffle recipe i put up, but i used chia seeds as a thickening agent instead of pumpkin puree for these. they are simple, crispy and as good as any waffle i’ve ever had. vegan, gluten free or not.


  1. 2 teaspoons chia seeds
  2. 2 teaspoons warm water
  3. 1 1/2 cups unsweetened almond or coconut milk
  4. 1/4 cup coconut oil
  5. 1/4 cup maple syrup
  6. 1/2 cup gluten free rolled oats
  7. 2 1/4 cups all purpose gluten free flour
  8. 1 1/2 teaspoons baking powder
  9. 2 tablespoons apple cider vinegar
  10. 1 teaspoon cinnamon
  11. 1/2 teaspoon salt
  12. 1 teaspoon vanilla extract


  1. combine the 2 teaspoons chia seeds with 2 teaspoons water and set aside, allowing them to thicken, about 5 minutes
  2. in another bowl combine the almond or coconut milk with the apple cider vinegar and set aside for a few minutes
  3. in another bowl combine the dry ingredients: oats, flour, baking powder, salt, cinnamon and stir until incorporated
  4. add the chia seeds, coconut oil, maple syrup & vanilla extract to the milk & vinegar mix & whisk together, then pour into flour mixture and whisk together
  5. turn on your waffle iron and let mix sit for a few minutes while your iron heats up
  6. cook according to your iron’s directions, and then top with syrup, fresh fruit and/or butter (i like earth balance soy free)
