gluten free/vegan pumpkin chocolate chip cookies.

so i’m crazy for pumpkin & i love a pumpkin cookie. these ones are really soft and almost biscuit-y, which i am all about. they are vegan, gluten, and soy free but they are still delicious. the trick is in the coconut oil (magical thing that it is). for the chocolate chips i use enjoy life chocolate chips. they are dairy, soy & nut free but still taste like dark chocolate drops of heaven. you can find them pretty much everywhere, i’ve even seen them at target. this recipe makes about a dozen cookies, so you don’t have to worry about eating 27 cookies by yourself.

ingredients:

  1. 1/2 cup coconut oil
  2. 3 tablespoons agave nectar
  3. 1/2 cup pumpkin puree
  4. 1 tablespoon vanilla extract
  5. 1/2 teaspoon pumpkin pie spice
  6. 1/2 teaspoon salt
  7. 1/2 teaspoon baking soda
  8. 1/2 teaspoon baking powder
  9. 1 cup all purpose gluten free baking mix (i used trader joe’s)
  10. 1/2 cup chocolate chips
  11. 1/2 cup almond (or dairy) milk

directions:

  1. pre-heat oven to 350 degrees
  2. in a stand mixer or large bowl with hand mixer combine coconut oil & agave until creamy
  3. add in pumpkin & vanilla extract
  4. continue to mix as you add in pumpkin pie spice, salt, baking soda & powder
  5. add in flour and milk
  6. beat well and then add in chocolate chips
  7. use an ice cream scoop to make uniform size cookies on baking sheet (the batter doesn’t spread much so it’s okay to pack ’em in)
  8. bake at 350 for 10 minutes
  9. remove & transfer to cooling rack
